Ingredients:
  • 3 eggs
  • 1/3 cup all-purpose flour
  • 1/3 cup buckwheat flour
  • 1 cup whole milk

Instructions:
  1. In a blender, combine the eggs, all-purpose flour, buckwheat flour, milk, and maple syrup. Blend until smooth. Note that the buckwheat flour may settle as the batter stands, so stir before cooking if necessary.
  2. Heat a nonstick frying pan over medium-high heat. When the pan is hot, brush the bottom with butter.
  3. Lift the pan from the heat and pour in 1/4 cup of batter. Immediately tilt and swirl the pan to coat the bottom. The crêpe should set at once and form tiny bubbles. Return the pan to the heat and cook the crêpe for 1 to 3 minutes until the edges are lightly browned and the surface looks dry. Use a spatula to loosen the edge of the crêpe, then turn it over.
